“We just want to be everyone’s favorite restaurant,” said owner John Nealon, who owns the restaurant with partners Christian Petroni and Rob Krauss.
“Hopefully, we’re the kind of place you can come into a couple times a week and simply enjoy great food with great people.”
Fortina, located at 17 Maple Avenue in the back of the upcoming Armonk Square, will lean on two wood-fired ovens of which hide in a corner of a spacious setting fixed with torched wood walls, wine-barrel seats and high ceilings. It will certainly be one of the more unique dining environments Armonk has to offer.
But Nealon says the core of Fortina’s vision will rely on classic Italian habits.
“We’re not re-inventing the wheel here or re-creating anything,” he said. “We just wanted to create a great space for what we believe will be a very traditional Italian menu.”
Though it may be traditional, it will also be vast. In addition to pizza, Fortina will offer a variety of fishes, salads, pastas, antipasti, a salumi-fromaggi program (meats and cheeses) and a full blown adult beverage listing complete with some of the owners’ favorite wines and beers—all of which they hope customers find to be affordable.
“We’re focusing on value right from the beginning,” said Nealon.
While all three owners have experience in the restaurant business—Petroni was a chef and general manager of Greenwich’s “Barcelona”—they hope Fortina takes pieces of everything they’ve learned up to this point to create a special home in Armonk.
“We hope our customers learn to love this place as much as we do,” said Nealon. “We want them to become part of our family.”
